3-2-1 Cake
This could not be easier or yummier (is that even a word?, who cares). You simple mix 1 box of angel food cake mix and a box of any other cake mix you like together. In a coffee mug, mix 3 tablespoons of the cake mixture, 2 tablespoons of water, and microwave for 1 minute. Enjoy!
Chocolate Chip Cookie Dough Cupcakes
There are awesome, if I must say so my self. I made these for a cookout and they were a huge hit. You have to give them a try... and tell me what you think.
Its a basic chocolate cupcake with the added surprise of cookie dough in the middle (egg free dough that is). The frosting is very yummy as well, in fact I had more people ask me for the recipe because they were interested in the frosting than the cupcakes as a whole.
Cupcake Ingredients:
1/4 cup oil
3/4 cup sugar
1 egg
1 t. vanilla
1 cup flour
1/3 cup cocoa powder
1 t. baking powder
pinch of salt
2/3 cup milk
Filling Ingredients:
1 2/3 cup flour
1/2 cup butter, melted
2/3 cup brown sugar
1/4 cup sugar
1 T. vanilla
2/3 T milk
1/2 cup mini chocolate chips
Frosting Ingredients:
3 sticks of butter, room temperature
3/4 cup brown sugar
1 cup powdered sugar
1 cup flour
1 T. vanilla
3 T. milk
Directions: Mix ingredients for cupcakes. Line cupcake baking dish with cupcake papers and fill 2/3 full with cupcake mixture. Bake for 20-25 minutes at 350° or until cooking completely but still soft to the touch. While the cupcakes are baking, mix ingredients for the filling and frosting in separate bowls and chill. Let cupcakes cool completely. Cut hole in center of the cupcakes. I cut my hole approximately 1" diameter and 1" deep, but it could have been extra because I had leftover filling. Frost cupcakes with frosting and top with additional mini chocoalte chips if you desire (I recommend this because you can never have too many chocolate chips).
