About Stacey
Since moving to the country a few years ago I have been trying to live more simply. By living simply, I mean I try to buy unprocessed foods, grow my own when possible, and heat with wood. I try to make do with what I have and enjoy the blessings I've been given. We are new to this lifestyle and we are learning as we go. Sometimes its a bumpy road, sometimes we make mistakes, but we are learning more each day.
About three years ago my husband and I bought some property and started our jouney down this road to being "farmers". We are not really farming anything but we like to think of ourselves as farmers. In those years are built our house and expanded from a two dog family to having cats, horses, dogs, and chickens.
Last year we got two horses. A standardbread named Arty and a quarter horse named Ben. They are amazing creatures but neither of us have owned horses so we are learning everything as we go. We have taken a few lessons on them and plan to continue to do so in the future.
I love to cook and bake from scratch as much as possible. I do not always have time to make things from scratch but thats fine. Its a balancing act of getting done what needs done and having a little time left to enjoy life. I will share the recipes that I've found online and the ones I come up with on my own.
We are slowly making the transition to whole and organic foods. I have been learning about all the benefits of eatting this way and plan to try to live off the land we have as much as possible. We grow a garden each year, I can and freeze, we buy only grass fed beef in bulk, just this year we got six laying hens for our very own farm fresh eggs, and I even harvest fresh wild berries off the land. Its not an "all or nothing" type of thing for us. It's more of an "all or something" meaning doing something better than we did in the past is progress toward healthier lives.
In addition to living healthier lives, I'm also striving to eat better to promote weightloss. My personal beliefs are to eat whole, real, food rather than more processed foods that are labeled as "low fat".
On this site I describe our adventures in transitioning from living in town to the country, caring for our animals, learning to ride horses, take care of our land, cooking and baking, finishing our house, and having fun in between all the work.
